The perfect omelette

The man knows his eggs

My husband turned out this beauty Sunday morning. Eggs, cheese, non-stick pan from Ikea – classic.

We’ve rediscovered omelettes this winter after I spent most of October cooking for my carnivorous father.

His dinners only need three things, meat, potato, bread.

Tired of going through the animal kingdom, I suggested omelettes one night. Stuffed with roasted red peppers, sauted mushrooms and cheese, they pleased the Old Man so much that he requested another the next week.

I whisk a little cold water into my eggs and swear by its ability to make an omelette fluffy – no scientific proof. There’s no recipe. Have at it. Or post your favorite ingredients. The ground hog saw his shadow so there’s plenty of winter left…
